NAW2026: Lilian Yakawa on Her Level 2 Commis Chef Apprenticeship Journey
As part of National Apprenticeship Week 2026 (NAW2026), we’re proud to spotlight one of our outstanding alumni apprentices, Lilian Yakawa, who completed her Level 2 Commis Chef Apprenticeship and went on to become a Purple Umbrella Award Winner 2025.
Lilian’s journey is a powerful example of how apprenticeships combine practical experience with structured learning, building confidence, capability and career progression within the hospitality industry.

1. What made you decide to start your apprenticeship?
I have always been passionate about food, with a dream of owning the world's largest network of chefs and restaurants. I knew it would be essential not only to study culinary arts but also to gain hands-on experience in a professional kitchen. In contrast, I studied so I could match theory with practical application.
2. What were you doing before, and how has this changed your career path?
Before starting my commis chef apprenticeship, I was working in admin roles, from hotels to nurseries. I also loved cooking for family and friends; the kitchen has always been my happy place.
For a long time, I lacked the confidence to pursue a career as a chef. That changed when my mentor encouraged me to leap. This apprenticeship completely transformed my career trajectory.
My goal now is to grow as a well-rounded chef, gain experience across different cuisines, and eventually support and train younger chefs starting their own culinary journeys.
3. What’s been the most valuable skill you’ve developed?
Adaptability. The kitchen brings new surprises and challenges every day. As a chef, being able to adapt quickly while still producing high-quality results is essential.
4. Can you share a moment you’re particularly proud of?
One of my proudest moments was being entrusted to run a section independently. Even as an apprentice, I was responsible for managing qualified chefs in that section, overseeing orders, ensuring tasks were completed, and delivering during busy service times.
Successfully leading that section gave me a huge confidence boost.
5. What challenges have you overcome?
As a new apprentice or chef, your skills can sometimes be doubted. My ability to adapt and perform effectively was questioned at times, which caused me to doubt myself and make mistakes.
However, the more experience I gained, the more my confidence grew. I was able to prove that I was fully capable of thriving in a fast-paced, high-pressure kitchen environment.
6. How did you balance work with study?
I had to be very intentional. I created a structured study plan that worked around my shifts. Kitchen work can be physically demanding, so I made sure my timetable included realistic deadlines and time to rest.
Planning properly helped me stay consistent and avoid burnout.
7. How has the apprenticeship impacted your life personally and professionally?
This apprenticeship has had a profound impact on me.
Personally, I’m far more confident and better equipped to handle high-pressure situations.
Professionally, I’ve gained the knowledge, practical skills, and industry experience needed to succeed as a chef in any kitchen environment.
I now feel able to set clear goals for my continued growth in the industry.
8. The chef industry is always evolving. Where do you see it heading in the next five years?
I believe we’ll see more young, innovative chefs emerging with fresh ideas and creative fusion dishes. I think we’ll begin to see greater unification within the culinary world globally, with more collaboration across cultures and cuisines.
9. Would you recommend apprenticeships to others?
Absolutely.
Firstly, apprenticeships allow you to apply what you learn in class directly to a real working environment. You don’t just understand the theory, you learn how to translate it into practice.
Secondly, many employers, especially in hospitality, value experience just as much as qualifications. Apprenticeships provide first-hand, real-world experience that makes you more employable.

10. What advice would you give to someone just starting out?
Don’t be afraid to make mistakes. Mistakes are part of growth.
Ask questions. Clarifying expectations ensures quality and food safety.
Be bold and confident. The kitchen is fast-paced and demanding; believe in your ability and stay focused on improvement.
