Purple Paper Reveals Key Actions to Accelerate Hospitality Apprenticeships and Management Capability

Umbrella Training has released its latest Purple Paper, following our Employer Round Table held on 20 February 2026 in partnership with Caterer.com. The report brings together insights from leading hospitality employers and outlines a clear roadmap to strengthen apprenticeship delivery, elevate management capability and attract the next generation of talent.

This comprehensive paper highlights the four priority areas employers say will make the biggest impact on performance, retention and operational efficiency.

1. Giving Line Managers the Tools They Need to Mentor Effectively

Employers told us that line managers need clearer curriculum visibility, time-saving tools, and simple, just‑in‑time guidance to support apprentices with confidence. In response, we are introducing:

  • Curriculum on a Page for every standard

  • 30‑minute line manager induction briefings

  • Practice menus mapping real workplace tasks to units

  • Evidence capture packs to streamline off‑the‑job recording

  • A CPD micro‑credential to recognise great mentoring

2. Launching a Targeted Suite of New Umbrella Products

To improve the apprentice and manager experience, Umbrella will roll out:

  • Umbrella Evolve – Line Manager Edition

  • A mobile‑first Apprentice Handbook

  • A short‑form video library

  • Specialist short courses, including a Production Chef Booster

  • Monthly manager hours and quarterly Apprentice Town Halls

  • A rotational apprenticeship toolkit to support multi-site learning

3. Closing Senior‑Level Capability Gaps

The Purple Paper identifies clear knowledge and skills gaps at head of department and emerging senior manager level. To address this, we are developing a 12‑week Senior Hospitality Manager Accelerator, blending live workshops, micro‑modules and coached projects leading to an optional digital badge.

4. Reframing Hospitality for Young People and Their Influencers

Employers agreed that many young people and parents still have outdated perceptions of hospitality. The paper sets out a modern attraction strategy that includes:

  • Clear progression routes from Level 2 to senior roles

  • Early rotational tasters

  • Gamified milestones and digital badges

  • School and parent engagement

  • Practical perks like travel support and flexible scheduling

A Roadmap for 2026

The Purple Paper outlines key actions from now until the end of 2026, including the reintroduction of the Production Chef programme, launch of new resources, expansion of the video library, and pilots for both rotational apprenticeships and the Senior Manager Accelerator.
